Jalisco’s Queen of Traditional Cuisine, Maru Toledo, has published a new cookbook (her 22nd!) entitled “Comer y Vivir en Sayula” (Eat and Live in Sayula).
Sayula is a small town located 92 kilometers southwest of Guadalajara. Although the two cities are not far apart, their cuisines are quite different. Sayula was founded 20 years before Guadalajara, in 1522, at which time it was the capital of the Provincia de Ávalos, named after Alonso de Ávalos, cousin of Hernán Cortés. While gastronomy in Guadalajara followed the traditions of Nueva Galicia, Sayula was influenced by Nueva España.
