Experience the flavors and historical roots of Ajijic’s typical cuisine at the Raices Gastronómicas food festival scheduled for Sunday, February 4, 2 p.m. at the espalanade outside the Rosario chapel on the north side of the town plaza.
The culinary exhibition will showcase more than 100 different platters prepared in village kitchens following many recipes, techniques and ingredients that trace back to ancient generations.
Dishes will be displayed according to categories, such as pre-Hispanic recipes, chile-based salsas, local festivities and every day table fare, as well as variety of typical desserts and beverages. Visitors may reserve selected items to purchase for carry-out after 4 p.m.
Guests may also sit down to savor a complete meal, with three main dish menu options: Birria de Carpa (carp stew), Calabacita con Carne (zucchini with pork) or Pepián de Pollo, each served with sides of rice, beans and tortillas.
Admission to the fair is free of charge. Proceeds from the food and meal sales will benefit Pasión de Cristo, Ajijic’s spectacular Easter Passion Play.
