Adios to Salvador’s restaurant

Salvador’s Restaurant will say adiós to customers and close its doors at the end of the business day Sunday, April 1.

pg11aThe anchor eatery at Ajijic’s Plaza Bugambilia is slated to reopen within a couple of months under new management and a different name.

Proprietor Jorge Arreguin built and opened the restaurant 23 years ago in partnership with his brother Salvador. They named it after their father.  Jorge remained at the helm after his sibling and his wife started up their own place, Fonda Doña Lola, on the opposite end of town.

Salvador’s has maintained a loyal expat and Mexican clientele with its popular breakfast and lunch menus. Arreguin credits his success to consistency in quality and service, reasonable prices and the strong kitchen and wait staff that has been with him for many years.

Topping his list of valued employees is head chef Silvia Corona, a master of both traditional Mexican dishes and typical North American comfort foods. Her outstanding Thanksgiving and Christmas buffets have drawn crowds of more than 400 holiday diners time after time over the past 15 years.

Arreguin decided to take a well-deserved break from lakeside’s highly competitive restaurant trade to follow a new career path on the other side of the globe. He is headed for far-off Qatar, where will act as advisor to his elder daughter Yolanda and husband Jasser Aljaeda as they set up a snack food production factory.

Before he goes he will hand over the keys of the restaurant to a professional chef of Mexican descent coming in from Denver, Colorado under a ten-year lease agreement. The premises will be fully remodeled before opening anew with breakfast, lunch and dinner hours and an international menu.
