Manix II sets opening date

Two months after closing the doors of Manix Restaurant in central Ajijic, proprietor Héctor España Ramos is on the threshold of getting back in business at a new location.

pg15The address is Carretera Poniente 111, set off the north side of the highway near the intersection with Calle 5 de Febrero. The opening date is earmarked for Saturday, April 27, that will feature a Luau Night dinner extravaganza with a three-course menu, including an appetizer and tiramisu for dessert. The main course choices are España’s signature roast-sucking pig or grilled salmon filet.

Tickets are priced at 600 pesos per person and table reservations will be available on site as of April 15 until sold out, Monday through Saturday, 10 a.m. to 2 p.m.

A second grand opening will follow on Sunday, April 28, with the introduction of the Manix II weekly Menu Dominical designed to appeal to Ajijic villagers, Tapatio weekend visitors and foreign fans of authentic Mexican cuisine. The specialty of the house will be charred beef birria served with frijoles de boda (wedding-style beans) prepared according to recipes handed down by his late mother Julia Ramos. Menudo (tripe soup), carne asada (grilled beef), costillitas (small pork belly ribs) and other typical breakfast dishes will also be on the Sunday menu from 9 a.m., along with mixed grill (parrillada) platters to be ready as of noon. A team of ladies will be at work in front of the restaurant cranking out a steady stream of handmade tortillas. Live mariachi music will add a festive sparkle to the atmosphere.
