New chef takes over at Sayula’s famed boutique hotel

A exciting new executive chef is now serving up culinary delights at the Gran Casa Sayula Hotel Galería & Spa in the Jalisco town of Sayula, 35 miles south-west of Guadalajara and a 60-minute drive from the Ajijic area via Jocotepec.

Hadad Partida has worked at the River Café and Le Bistró en Puerto Vallarta, El Almacén del Bife and the Fiesta Americana Grand in Guadalajara and was executive chef at Flor y Canto in Mexico City.

Perhaps Partida’ greatest claim to fame to date was his stint in 2010 at  Ferrán Adria’s famed El Bulli Restaurant in Girona, Spain. The Michelin three-star restaurant has repeatedly been named as “the best restaurant in the world” by prestigious publications.

The Gran Casa Sayula’s Restaurante La Frambuesa has won plaudits for its fine dining since the hotel opened its doors in January 2011 under the direction of chef Manuel Bañuelos, who is now working at a prestigious eatery in Chicago, Illinois.

The five-star  boutique hotel contains 20 luxury rooms and suites. It is housed in a beautiful 18th century residence but is full of 21st-century touches, including a full spa, antiques and art gallery, chapel, bar, heated pool and a weight training area.   It’s also pet friendly.

“Obras” architecture magazine named Gran Casa Sayula as 2011’s best touristic building in Mexico.

The historic town of Sayula is home to one of Mexico’s most renowned master knifemakers, Jose Ojeda, and produces the delicious dulce de leche caramel spread known as “cajeta.”
