This would have been the middle of January. The 2020 promise of a new life. But within weeks, a deadly virus hit hard in Guadalajara and Ricardo’s restaurant was shut down. With one deadly blow, he lost his entire investment. Instead of falling back and accepting defeat, he turned to a friend, Adrian Castro. And both decided to come to Ajijic with a small food truck, essentially a stove and oven on wheels. “A darle que es mole de olla,” the Mexicans might say. (“Never stop working on something with energy and enthusiasm.” – a famous Mexican rallying cry.)
