Guadalajara cooking teacher puts ideals in the pot

If not completely cause-driven, the culinary classes of longtime Guadalajara resident Lily Walker are definitely steeped in more than a bare desire to teach plant-based, whole food cooking.

pg5aBuilding community is one goal, she said, perhaps reflecting her upbringing in multiple locations around the world. The daughter of British parents born in the United States has found, since coming to Guadalajara 20 years ago, that “more and more people want to eat a plant-based diet,” and that by fostering a convivial atmosphere and keeping class prices economical, she can have fun and improve the health of individuals and the planet. (In 2022, Naomi Oreskes agreed on the latter point in Scientific American—“one effective act [to reduce carbon] … is to eat less red meat”—but added that oil corporations embrace this to evade more effective measures such as a carbon tax.)

To build community, Walker has done classes that raise money to support growing trees, protecting street dogs or, farther afield, to help war-torn Palestine.
