Those were the words of Hector España Ramos, owner/proprietor of Manix Restaurant, after a young Ajijic man received his restaurant apprenticeship certificate of completion on May 5.
There are many hours involved in learning to be a high-end restaurant waiter/waitress at lakeside. Juan Maurice Macias completed, without pay or tips, his apprenticeship at Manix on April 28.
Macias enthusiastically embraced his 32-hour course of beginning English and the 96 additional hours waiting tables under the mentorship of Hector and Anna España.
Butterflies en Mexico (BeM) is a nonprofit that has been in existence for five years in the United States and more than two years in Mexico. Its main goal is to help children and youth become healthy citizens by developing options so they can remain and work in their communities.
Thanks to the financial support of the Rotary Club of Ajijic, BeM will be able to offer three additional youths, aged between 18 and 25, the same opportunity in three lakeside restaurants.
