How encouraging it is to see a flurry of new art-oriented cafes, bistros and gourmet restaurants sprouting up in the city, now that Guadalajara has been designated “the cultural capital of the Americas.” La Mata Tinta, a great new bistro recently opened its doors to a standing-room-only crowd Wednesday. This is an off-shoot of the flagship operation in Tlaquepaque at La Parian, where they have curried experience catering to exquisite tastes for the last eight years.
At the helm are founders Ana Liz Taylor Mata, Mexican-Canadian and Douglas Galloway, a Scottish expat. This duo have brilliantly turned their Tlaquepaque operation into a must-visit destination, with their occasional open-street collectives featuring some of Guadalajara's best artists and creating a rubber-necking fervor with passersby. Add to this their roster of nightly entertainment and the gourmet fair and it is an evident formula for success.
Located at the north west corner of Chapultepec and Justo Sierra, next door to the also newly opened eateries La Pinta Negra and home cooked Japanese cuisine Uma Uma. All in one fell swoop, this corner promises to be La Zona Rosa's newest hot spot. The inaugural exhibit features works from some 30 different photographers from the University of Guadalajara.
