Ever wondered how to prepare the ideal cup of coffee? If so, good news: Coffee expert and Guadalajara resident Rudy Reteig has released a booklet detailing the best methods of roasting, grinding and brewing those beans.
Born in Suriname, South America, Reteig worked for 12 years in the coffee and cocoa industries and has been living in Guadalajara for 15 years. His 17-page booklet, “Coffee: From Roast to the Ideal Cup,” contains insider’s tips on how to excel in coffee making.
Among Reteig’s most important advice is not to burn the coffee beans while roasting – “This is almost a crime,” he says – and not to over boil the coffee while brewing it. Burning the coffee beans can destroy up to 38 percent of the caffeine and boiling above 100 degrees reduces the quality of the flavor, he explains.Reteig favors Colombian coffea arabica, but admits, “the perfect cup of coffee is a utopian idea because there are so many different ways of doing it.” He says his booklet is just an aide to help readers discover how to prepare a coffee that suits them best.
