Manix restaurant going strong as farewell approaches

Manix Restaurant Bar, an icon in Ajijic’s growing constellation of prime dining spots, will maintain regular customer service of its popular menu choices and occasional special events before closing its doors at the end of the year.

pg15aProprietor Héctor España Ramos spoke with the Guadalajara Reporter this week to reveal that he and his five siblings intend to put the family property at Ocampo 57 on the market, taking the next few months to end the 36-year history of one of the town’s oldest and most abiding restaurants.

Manix was founded in 1987 by Manuel España Ramos, who had honed extraordinary culinary skills from his youth during more than a decade he was employed as a private chef for a foreign resident from Louisiana. With years of experience under his belt from working at his older brother’s elbow, Héctor took over the business after Manuel died in March, 2017.

Manix developed a unique menu for the restaurant, including specialty dishes that are still popular among its loyal clientele. Favorites include authentic Ossobuco and two other excellent veal platters,  an unparalleled filet mignon, fish filet smothered in a rich mushroom cream, and the sumptuous corn soufflé not to be found anywhere else at lakeside.
