Fiestas Patrias season is the ideal time to indulge in Mexican cuisine to your heart’s content. I sure have done my share since the first of September and my appetite hasn’t slacked since Independence Day.
I absolutely relished tucking in to a masterful chile en nogada at Teocintle Maíz, Ajijic’s one and only dining spot for gourmet meals a la mexicana. Perfectly balanced flavors and elegant presentation made for an incomparable September 16 palate-pleaser.
Still, I have an undying penchant for more humble eating experiences. A home-cooked platter of frijoles de la olla, topped with salsa and a dollop of crema and accompanied by tortillas puffed up on the comal happily satisfy hunger at any given moment.
