On Tuesday, April 29, Operation Feed and the Rotary Club of Ajijic held a ribbon-cutting ceremony to mark the installation of a new walk-in refrigeration system at Operation Feed’s headquarters in San Juan Cosala.
Every week, Operation Feed provides food to 150 families (more than 500 people) in San Juan Cosala. The initiative began several years ago when a gentleman who owns a produce business in Guadalajara’s Abastos market reached out to offer a donation of fresh produce for the group’s weekly food packages. Initially intended as a one-time donation, the contribution continued, and now, four years later, he still donates produce to Operation Feed twice a month. Every other Tuesday, Operation Feed drivers collect the produce in Guadalajara.
However, during the summer months, the produce would often wilt before it could be distributed, as it only lasted for about two weeks. Thanks to the new refrigeration unit, the produce now stays fresh for the full two weeks, allowing the group to provide additional items. For the first time last week, they were able to distribute chorizo.
